Storage for your precious cargo
Here is a few tips on how to store and keep your chocolates at their best: Our chocolates are made fresh and with all natural ingredients. We do not use or add any artificial ingredients. This is why we highly recommend that you consume our chocolates within 2 weeks of delivery.....To my personal experience, a chocolate box in my house never last more than 3 days! To ensure their freshness and their quality, our chocolates should be stored in a dry, cool place, ideally between F.59 and F.65, and under 65% humidity. Do not refrigerate your chocolates or they will lose their texture and possibly their shine and color. Plus, they won't absorb any other smell present in your refrigerator.
Chocolate tasting
Like wine tasting, chocolate tasting is an art. Place a small piece of chocolate on your tongue and let it melt. Your taste buds will be so grateful for that! Unlike wine, please DO NOT SPIT IT!
An excellent quality chocolate won't stick to your palate. But it will quickly melt in your hand. The flavor of the chocolate depends not only on the quality of the cocoa nibs and the flavorings used but also on a complex process of grinding, heating and blending. It has a rich warm dark color and a deep aromatic smell.
The taste must be deep, powerful, franc with no aggressive feeling. A light bitterness is always appreciated. Chocolate does not require to be accompanied by a special beverage. A good crisp glass of water will allow you to fully enjoy a nice piece of  chocolate.
Chocolatetherapy
Chocolate is like a treasure chest. It is rich and is an exceptional nutritional element. It is also a piece of pleasure, a source of well-being and sometimes even euphoria. The higher cacao content, the better it is. You will find magnesium, potassium and phosphorus in its nutritional value. Often, we blame chocolate for our digestion, acne or migraine problems. These are all myths. The only trouble found in chocolate is its calorie content. So, moderation is the key...
It also contains theobromina and caffeine, but in a very small quantity. You'll have to eat a lot of chocolate to get the amount of caffeine found in a cup of coffee.
It is known to own anti-depressive and aphrodisiac properties. But I will let you be the judge of that, since no scientific experiment has come to an end!
